This recipe is an elegant addition to the brunch repertoire. Enjoy
Ingredients.
8 large egss, slightly beaten1 1/2 cups whole milk1 1/2 cups Tillamook cheddar cheese, shredded6-8 slices Columbo Sliced Sour Dough round bread3 tablespoons butter, softened6-8 oz cracked and peeled crabmeat or canned crabmeat4 chopped scallions1/2 cups fine chopped red bell pepper1/2 teaspoon cajun spice or seasoned salt1/2 teaspoon fresh lemon juice1 teaspoon worchestershire sauce1/2 + cup Best Food's Mayo1/2 teaspoon salt1/8 teaspoon ground black pepper
Succulent sweet crab is the key ingredient to this spin off of an old favorite. The cheese on top bubbles up to make a golden crust and the eggs and crab stay moist and melt on your tongue. Like most breakfast casseroles, you can make it up the night before and refrigerate to cook in the morning, but you don't have to. Great served with fresh fruit and sweet rolls for those not on a diet. Put the diet on hold and savor this delicious brunch addition. You will need the following to make the crab casserole.
Use skim milk and reduced calorie mayo if desired. The recipe won't be quite a rich [link widoczny dla zalogowanych], but it will work just fine. Low fat cheese is not recommended, however.
For added flavor add crumbled cooked bacon to the crab mixture. A few dashes of Tobasco Sauce will give it a little kick. Montery Jack cheese is excellent instead of the cheddar, or use a combination of the two. You can also substitute imitation crab meat if quality fresh crab is not available. It's very inexpensive and available year round in supermarket delis.
Best to use room temperature butter for easy spreading. To assemble the recipe do the following.
Should you have any left overs, they can be frozen for up to one month and reheated in a low oven until warmed through. Increase cooking time by 15-25 minutes if cassarole has been refridgerated prior to baking.
Assembly of Casserole:
Grease or spray a 9X13 baking dish.Butter one side of bread and line baking dish with bread slices.Combine eggs, milk, cheese, salt and pepper in a bowl and set aside.Combine crab, scallions, bell pepper, lemon, Worchestershire [link widoczny dla zalogowanych], mayo and seasoning and mix well.Arrange crab mixture atop slices of breadPour egg and milk mixture over the bread and crab [link widoczny dla zalogowanych], adding up to 1/4 cup milk as needed to soak into all the bread.Bake uncovered at 325 degrees until almost set in center, approx. 1 hour. Serves 6-8
