Tostadas with Simple Toppings
It doesn’t get much easier—or better—than building tostadas with simple, fresh ingredients that go well together. The salsa in this recipe is made with only four ingredients and the guacamole only three (plus salt and pepper for seasoning). How easy is that? And how good.

To make great tostadas, start by making great individual ingredients to layer onto the tortillas. For the tastiest results, keep it simple—too many complex flavors work against each other when combined.

6 6-inch corn flour tortillas or 4 8-inch corn flour tortillas

2 medium tomatoes, chopped3 cayenne peppers, chopped (seeded, for less heat)1/2 small onion, chopped1/4 teaspoon chili powdersea saltfreshly ground black pepper

Tostadas may not often be considered healthful food, but they can be. Bake the tortillas instead of dousing them in hot oil and use only fresh vegetables in the toppings. Skip the refried beans and sour cream and spread the tortillas with delicious homemade guacamole. Cut the catfish into thin strips, about 2 inches long and 1/2-inch wide.Place the flour in a plastic bag and the cornmeal, spices, and salt in another bag. Season with salt and pepper and set aside.In another bowl, mash the garlic with a fork to form a chunky paste.Place the avocado in the bowl and mash into the garlic. Incorporate well.Stir in the lime juice and season with salt and pepper. If you’re not using the guacamole right away, cover it with plastic wrap (push the wrap down until it’s touching the guacamole) and refrigerate until ready to use to prevent browning.Preheat the oven to 400 degrees.Line a large baking sheet with parchment paper and lay the tortillas on it in a single layer. This recipe also calls for catfish—mild, easy to work with, and inexpensive.
