Ishikari Nabe has a miso soup base and generally constitutes salmon, cabbage and tofu. Local recipes sometimes include their own local produce, such as Hokkaido potatoes. The name ‘Ishikari Nabe’ came about in when it was popularized in Tokyo, making it more memorable.

Ishikari Nabe (Salmon Miso Stew) Recipe:

Slice salmon fillet into bite-sized cubes. Marinate salmon cubes with soya sauce and a dash of mirin. Leave to marinate for 20 minutes.Bring the vegetable stock to boil. Add in Chinese cabbage (sliced to your preference).When cabbage has softened, add in carrots. Simmer till carrots are cooked through. An alternative would be to add in cubed potatoes at the same time with the carrots.Add miso paste in slowly, making sure it dissolves. Taste to ensure that it is not too salty.Add a dash of mirin into the soup after stirring in the miso.Add in butter to taste.Place tofu gently at one side and simmer for 2 minutes.Simmer the salmon cubes, just slightly below the surface of the soup until thoroughly cooked.Once the salmon is cooked, spoon an even portion of the soup, vegetables, tofu and salmon into individual bowls.(Optional step) Add a dash of sansho into the soup.
Ishikari is a district within the large northern island Hokkaido of Japan. The Ishikari River is Hokkaido’s main river and along with the Sea of Japan, abounds with salmon and herring.

This recipe serves 4 people. The soup is generally served with a bowl of steamed white rice. Another alternative would be to eat this with Japanese noodles (wheat noodles are recommended). After adding in the butter at step 6, throw in the noodles and boil until the noodles until it is almost cooked. Proceed with the following steps.
